Mock Crab Cakes

Another good use for zucchini

Ingredients:
2 cups coarsely grated zucchini
1 tsp salt

2 Tbsp grated onion
2 eggs, beaten
1 cup seasoned bread crumbs
1 Tbsp mayonnaise
1 Tbsp seafood seasoning

Oil for browning

Directions:
Mix the zucchini and salt and let stand 1-2 hours. Drain well.

Add the rest of the ingredients and shape into patties. Brown in oil.

Cook's Notes:
Of course I can't just use zucchini and onion in these patties. I finely chop celery, peppers, parsley, and a little grated carrot, and add these to the mix. Then shape into patties and brown in oil.

We don't do this often, maybe once a year. We are not big fans of frying, but these are so good, we have to do it occasionally.
