Beet Salad

Delicious way to serve beets

Ingredients:
3 medium beets, washed well, but not peeled
Beet greens, or arugula
Walnuts
Feta cheese
Crisp pear or green apple, chopped
Lemon dressing
Directions:
Make the dressing: combine oil, lemon juice, a little water, garlic powder, Mrs. Dash. Set aside.
Cover the beets with water, and boil for 40-45 minutes, until a knife slides gently into the center.
Let cool enough to handle, then slip off the skins.
Cut the beets into bite-size pieces.
Chop enough greens to form a bed for the beets. Add chopped walnuts, chopped apple or pear, and crumbled feta cheese.
Dress the salad just before serving.
Cook's Notes:
We sometimes use walnut oil, but olive oil works just as well.
