Butternut Squash and Green Beans

Ingredients:
Medium butternut squash
1/4 pound green beans, snipped and cut into 2 inch pieces
3 cloves garlic, minced
1/2 sweet onion
1-2 Tbsp Olive Oil

Directions:
Peel and de-seed the squash, cut it into cubes.
Coursely chop the onion
Heat the oil in a large skillet, and add the onion and squash cubes. Sauté for 5 minutes, then bloom the garlic.
Reduce heat and cook until tender, about 10 more minutes.

Cook's Notes:
Delicious and beautiful way to add nutritious vegetables to your dinner. We prefer the butternut squash, but you can use sweet potatoes instead.
