Kale Salad with Garlic

Nutritious salad using kale

Servings:

Total Time:
15 minutes plus 1 hour to marinate

Ingredients:
1 bunch kale (torn into bite size pieces)
2 Tbsp Tahini or peanut butter
2 Tbsp Apple cider vinegar
2 Tbsp Lemon juice
2 Tbsp Bragg's liquid Aminos (soy sauce OK)
2 Tbsp Nutritional yeast.
2 tsp minced garlic (1 - 2 cloves)

Directions:
Wash kale well, then tear into bite size pieces, set aside in a large bowl.

To make the dressing:
Mash together (or use the blender) Tahini, vinegar, lemon juice, liquid aminos, nutritional yeast, and garlic.

Add the kale to the dressing, and massage the dressing into the kale, until all pieces are coated.

Marinate for at least an hour

Cook's Notes:
We have a friend who is allergic to sesame, so he can't have tahini. We tried it with peanut butter, and it's even better, and everybody has peanut butter in the cabinet.

Nutritional yeast is available at Vitacost or the health food section of the grocery store. It's good for other vegetarian dishes too.
