Chilled Cucumber soup

Great way to use cucumbers from the garden

20 minutes to prepare, 2 hours to chill
Ingredients:
2 medium cucumbers
Cup water
Small onion
1/4 tsp salt
1/8 tsp white pepper
2 cups chicken broth
1 bay leaf
1/2 cup sour cream
1 Tbsp fresh chopped herbs
Directions:
Peel, seed, and chop cucumbers. Peel and chop onion. Cook in water with salt and pepper until very soft. Purée, add chicken broth and bay leaf. Heat to simmer. Chill. Add sour cream and herbs just before serving.
Cook's Notes:
We don't use the sour cream. It doesn't need it. For a little variety, use nutmeg instead of herbs. Interesting. Lovely appetizer.
