Leek soup

What to do with leeks

Ingredients:
3 leeks, white and light green parts only
2 ribs celery, thinly sliced
1 to 2 tablespoons oil or butter
Salt, pepper
2 to 3 cups veg or chicken broth
Directions:
Split the leeks lengthwise.
Slice thinly until you get to the dark green part.
Wash thoroughly to remove all traces of dirt.
Heat oil in a heavy wide pan. We use a wok.
Add leeks and celery with salt and pepper and cook over low heat for one minute.
Add broth and bring to a boil.
Cover and cook over low heat for 10-15 minutes.
Serve hot.
Cook's Notes:
We serve this soup over 1/2 a baked potato.
Sometimes I cube the potato and cook it in with the leeks.
If you like, add a little plain Greek yogurt (or sour cream) after the cooking is done. We put it on the potato, then ladle the soup over it.
