Nanny Barb's Onion pie

It's a fabulous quiche recipe!!

Ingredients:
1 egg yolk
1 10-inch unbaked pie crust
2 1/2 cups coarsely chopped Vidalia onions
1 Tbsp butter
1 1/2 cups grated Monterey Jack cheese
3 eggs + 1 egg white, beaten
1 cup milk or half & half
1 tsp Italian seasoning
1/4 tsp salt
1/8 tsp pepper
Directions:
Coat pie crust with egg yolk and blind bake for 5 minutes @ 425°
Saute onions in butter. Pour into pie crust.
Top with cheese.
Mix eggs, milk and seasonings. Pour over onions and cheese.
Bake @ 375° until set 45 - 60 minutes.
Cook's Notes:
Of course I sauté whatever vegetables we have: celery, leeks, mushrooms, spinach, asparagus, to make the 2 1/2 cups.
We mix Monterey Jack and Swiss to make the 1 1/2 cups cheese.
