Peach Ice Cream

Easy ice cream recipe

Ingredients:
2 cups peaches (mashed)
2 cups heavy cream
1 cup milk
3/4 cup sugar
4 egg yolks
Rock salt

Directions:
Peel and chop peaches. Add them to the blender and mash until smooth. You need 2 cups mashed peaches. A little lemon juice is good.
In a heavy sauce pot combine cream, milk, and sugar. Bring to a boil.
In a bowl whisk egg yolks. Add 1/3 of the custard mixture to the egg yolks while whisking to temper the eggs. Then add the egg mixture back to the custard, and bring back to the boil. Well, maybe just to 180 degrees; it will thicken as it cooks. Then cool the mixture in a bowl over ice for a couple minutes. Put the custard into the canister and refrigerate for a couple hours or overnight. When you are ready to make the ice cream, set up the ice cream machine and follow the directions.

This is so much fun. We use this recipe for peach, blueberry, coffee and strawberry ice cream. Just adjust the ingredients. The process is the same.
