Blueberry pie

What to do with all those blueberries

Ingredients:
9 inch pie crust (Jon makes ours)
Combine:
6 cups blueberries
3/4 cup sugar
1/4 cup cornstarch
Zest of a lemon
2 Tbsp lemon juice
1/4 tsp salt
Directions:
Preheat oven to 400*
Pour berry filling into crust, add latticed top crust, crimp and bake on a rimmed baking sheet for 1 hour, or until bubbling.
Cook's Notes:
This recipe will make 1 nine inch pie, or 3 small pies. Perfect for sharing.
We have substituted 6 cups of peaches for the blueberries, or 6 cups of mixed berries, everything else is the same.
