Pesto

What to do with ALL THAT BASIL

Ingredients:
1 1/2 cups fresh basil leaves
2 cloves garlic
1/4 cup pine nuts
1/2 cup Parmesan cheese, grated
Salt
Olive oil

Directions:
To keep your basil bright green (not black due to bruising) blanch the leaves.
Bring a pot of water to a boil, add the basil leaves, and leave them for just a few seconds until they are bright green. Drain immediately.
In a food processor, puree the basil leaves, garlic, pine nuts, Parmesan cheese.
Add the olive oil through the feed tube with the motor running, until you get the texture you like. Salt to taste..

Cook's Notes:
I've seen a lighter recipe that leaves the Parmesan cheese and pine nuts out of the pesto, and sprinkles a little cheese and nuts onto the finished dish.
