Momma's cheese biscuits

This is Momma making cheese biscuits on her 94th birthday. She has done it every December for as long as any of us can remember.

Ingredients:
1 pound cheddar cheese (grated)
1 pound butter (softened)
1 pound flour

Yep, that's it!!


Directions:
Grate the cheese into the bowl with the butter. Put it on the dining room table, and let it sit overnight.
The next day, add the flour, and combine until you can roll it into logs about 2" in diameter. Wrap these in waxed paper and put them in the fridge overnight.

The next day, slice with a very sharp knife into 1/4" slices. Place on a sheet pan lined with foil (shiny side down!) and bake at 400 - 425° for 10 minutes. (The oven temp depends on your oven. Mine does best at 425)
Cool on a wire rack before trying to remove them from the foil.

Cook's Notes:
Each roll should yield about 4 dozen biscuits.

We usually get the cat to lick off all the calories. Wink, wink...
