Yeast Rolls

Perfect for your Thanksgiving dinner.

Ingredients:
2 Tbsp active dry yeast
1/2 cup warm water
1 cup milk, scalded
1/3 cup sugar
1/2 cup butter
2 tsp salt
3 eggs, beaten
5 to 5 1/2 cups unbleached flour
Directions:
Add yeast to 1/2 cup warm water, and let stand 10 minutes.
Combine scalded milk, butter, sugar, and salt. Cool to luke warm.
Stir in 2 cups flour and mix well. Add yeast mixture and eggs and mix well.
Add remaining flour to make a soft dough. Knead 10 minutes until dough becomes smooth and satiny. Put dough in an oiled bowl, turning once to coat thoroughly. Cover with a towel and allow to rise in a warm, draft-free place until doubled, about 1 hour.
Turn dough out and shape into 1 inch balls, or your favorite shape, and arrange on ungreased cookie sheets. Cover again and let rise in a warm, draft-free place until doubled, about 30-45 minutes.
Preheat oven to 350, and bake for 18-20 minutes, or until rolls are lightly browned.
Cook's Notes:
We use the oven heated to 115 for the rise.
Our favorite shape is to roll out coils and tie into knots, tucking in the ends.
Recipe makes 24 rolls, 2 oz. each. Perfect size for little turkey sandwiches.
