Janet's Cornbread

Best and easiest cornbread ever

Ingredients:
1 cup corn meal
1 cup flour
1 tsp salt
3 tsp baking powder
1/8 cup sugar
1 egg
1 and 1/4 cup milk
1/2 stick butter

Directions:
Combine dry ingredients. Combine egg and milk, and add to dry ingredients. Stir to blend only, do not beat.
Melt the butter in a cast iron skillet, then spoon in the batter and bake for 15-20 minutes at 400 degrees.

Cook's Notes:
We only make 1/2 the recipe at a time, so we mix the dry ingredients for 1/2 the recipe and put it into pint jars, and add the egg and milk when we are ready to bake a batch of cornbread. We also use a divided cast iron skillet. It cooks the bread into serving size wedges.

And...of course, we leave out the sugar. Don't want sweet cornbread.
