Zucchini bread

What to do with ALL that zucchini!

Ingredients:
2 cups shredded zucchini
1 cup almonds
1 1/2 cups sugar
1 Tbsp lemon zest

1/2 cup oil
1/2 cup apple sauce
2 eggs
1 tsp vanilla

3 cups flour
1 tsp each: baking powder, baking soda, salt, cinnamon.

Directions:
Mix together zucchini, almonds, sugar, zest.

Combine oil, apple sauce, eggs then add to zucchini mixture.

Combine dry ingredients then add to the mix.

Grease and flour 2 medium loaf pans or 5 small loaf pans.

Bake 350° for 45 - 50 minutes. Cool in pans for 15 minutes before trying to remove them.


Cook's Notes:
If your shredded zucchini seems very wet, squeeze out some of the moisture, or back off a bit with the other wet ingredients.

I love these recipes for holiday sharing. Nobody wants a lot, but a little is so nice.
