Cranberry bread

OK, very similar to apple and pumpkin.

Ingredients:
12 oz coarsely chopped cranberries
1 cup chopped pecans
1 1/2 cups sugar
3 Tbsp oil
1 cup orange juice
2 eggs
2 Tbsp orange zest
3 cups flour
1 tsp each: baking powder, baking soda, salt
Directions:
Mix together cranberries, pecans, sugar.
Combine oil, juice, eggs, zest and add to cranberry mixture.
Combine dry ingredients then add to the mix.
Grease and flour 2 medium loaf pans or 5 small loaf pans.
Bake 350° for 1 hour. Cool in pans 15 minutes, then remove.
Cook's Notes:
One time we realized we had no orange juice, after we'd already begun the process, so we used cranberry juice instead. All it did was change the color a little. Still good!!
