Pumpkin bread

A lot like our apple cake.

Ingredients:
2 cups pumpkin
1 cup chopped pecans
1 cup Craisins
1 1/2 cups sugar
1 cup oil. (or 1/2 OJ, 1/2 oil)
2 eggs
1 tsp vanilla
3 cups flour
1 tsp each: baking powder, baking soda, salt, cinnamon, ground cloves, nutmeg.
1 Tbsp orange zest, (if desired)
Directions:
Mix together pumpkin, pecans, Craisins, sugar.
Combine oil, eggs, vanilla and add to pumpkin mixture.
Combine dry ingredients, then add to the mixture.
Grease and flour 2 medium loaf pans, or 5 small loaf pans (for sharing.)
Bake 350 ° for 1 hour.
Cool 15 minutes before trying to remove them from the pans.
Cook's Notes:
We have used apple sauce, orange juice, or pineapple juice and the bits for 1/2 the oil.
Just as tasty, and probably healthier.
I even substituted grated butternut squash for the pumpkin. Excellent!!!
