The Best Apple cake

It's called cake, but I think it's more like bread.

About 3 hours

Ingredients:
4 cups peeled, diced apples
1 cup chopped pecans
2 cups sugar
Mix together and let stand 1 hour.

1cup oil ( or 1/2 apple sauce, 1/2 oil)
2 eggs
1 tsp vanilla
Combine and add to apple mixture.

Then add:
3 cups flour
1 tsp each: cinnamon, (nutmeg, if desired)
baking powder, baking soda
1/2 tsp salt

Directions:
Grease and flour a tube pan, or 2 medium loaf pans, or 5 small loaf pans (for sharing.)

Bake 350° for 1 hour 15 minutes.

Cool completely before wrapping for a crusty outside.

Cook's Notes:
When we were little we had a huge apple tree in the back yard, and our neighbor, Ruby Whitman would take lots of apples, and treat us with this wonderful cake.
