Jon's pizza dough

This is just the dough, you have to add your own toppings

Ingredients:
1 cup very warm water
2 Tbsp active dry yeast (1 package, 5/16 oz)
Pinch of sugar
1/2 cup whole wheat flour
1 cup bread flour
1/2 tsp salt
2 Tbsp olive oil
Fresh or dried herbs: oregano, thyme, rosemary, basil
1 to 1 1/2 cups more bread flour

Directions:
Dissolve yeast in warm water, with the pinch of sugar. Allow to rest for 5 minutes.
Meanwhile, combine whole wheat flour, 1 cup bread flour, salt, herbs and olive oil.
Add the risen yeast to the flour mixture, and stir.
Knead in the remaining flour until the dough is smooth and elastic. You may not need it all. It should take about 5 minutes to achieve this.
Put the dough back in a greased bowl, cover with plastic wrap and let it rise in a warm, draft-free place for 15 minutes.
Spray a 14 inch pizza pan, or two 10 inch pans with cooking spray. Stretch the dough to fit the pans, and flute the outer edges to hold your favorite fillings. Prick the bottom of the crust with a fork. Bake the unfilled crusts at 450° for 12 -15 minutes. Now add your toppings and reduce the oven temp to 425° and bake for 12 to 15 minutes more. Voilà

Cook's Notes:
Be aware that the AMOUNT of flour varies with the brand, the weather, the season. Just add enough to get the results you desire.

We use greens from the garden, onions, eggplant, mushrooms, tomatoes in season. You can really use anything you like.

This recipe took longer to put into words than it actually takes to do. It's very simple, and fun .
